Luwak Coffee

Kopi Luwak or civet coffee, is coffee made from the beans of coffee berries which have been eaten by the Luwak (Paradoxurus hermaphroditus), then passed through its digestive tract.  

The luwak is a discerning eater, using its excellent sense of smell it only selects and eats the ripest and sweetest berries, which also means choosing the ripest coffee bean inside the berries.  In its stomach, enzymes seep into the beans, making shorter peptides and more free amino acids.  Passing through a luwak's intestines the beans are undigested and unharmed but irreconcilably changed for the better.  

Our trained harvesters collect them from the woods floor & wash them thoroughly, sun dried, remove the outer skin from the cherries. Our experts will then selectively handpick the coffee beans, and roast the beans to perfection.  These beans yield a great coffee with much less bitterness.
